Lets face it… sometimes, when it’s cold and rainy outside, when your to-do list seems to stretch into the sunset, when the kids are driving you round the bend, when you’re shattered from a long day at work or just because only junk food will do. It’s like some sort of stress/food related universal law.
But just because it’s classed as junk food doesn’t mean you need to fill your body with crap. In fact with a little clever thinking and a few ingredient swaps you can turn the most sinful of fast foods into a healthy teatime treat.
- 150g Wholemeal flour
- 100g Gluten Free Flour
- 10g Chia seeds
- 10g ground (milled) flaxseed or linseed
- ½ teaspoon salt
- ½ teaspoon quick yeast
- ½ teaspoon oregano
- 2 tbpsn olive oil
- 175ml luke warm water
- Passata to top
Place all the dry ingredients into a bowl and mix well. Then make a well in the middle and pour in the oil, and about ¾ of the water. Mix well. If your dough is still a bit dry, keep adding a little more water and mixing until you get a nice bread dough consistency.
Sprinkle a little flour on to a dry, clean surface, turn out your dough and knead firmly by hand for about 5 minutes until smooth and silky. Pop your dough in a clean bowl, cover with cling film and leave it somewhere warm to rest for about 10 minutes.
Remove the dough and roll out on a lightly floured surface to a round about 30cm across – or split the dough and make two slightly small pizza bases.
Spread a thin layer of passata over the pizza base and then pile on your favourite healthy pizza toppings! How about…
Neopolitan: Slices of fresh mozzarella, roughly torn basil leaves, chopped garlic and a glug of extra virgin olive oil (add a few spoons of pesto if you’re feeling indulgent!)
Quattro Stagioni: Sliced fresh Mozzarella, thinly sliced mushrooms, roughly torn ham, chopped artichokes, olives, and a pinch of oregano.
Romana: Sliced fresh Mozzarella, anchovies, capers, and oregano.
Contadina: Sliced fresh Mozzarella, asparagus, sliced mushrooms, lean bacon (with all visible fat removed), and a generous sprinkle of parmesan.
Mare e Monti: Sliced fresh Mozzarella, seafood (we like a simple can of tuna and a handful of fresh prawns) and sliced porcino mushrooms.
