(Makes 1-2 Servings)
Most of us grab a slice of toast or a bowl of cereal for breakfast, but did you know that these two food groups – wheat and dairy – are often the cause of bloating and sluggishness as a result of intolerance.
The thought of cutting out these two foods can be a bit of a challenge, so to help you I’m sharing one of my favourite breakfast recipes from my The Happy Mummy Cleanse.
The Happy Mummy Cleanse helps you identify which foods make you feel amazing and which foods drain your energy and keep you overweight. It is based on an elimination diet and part of the elimination process is to temporarily cut out certain foods that people are often intolerant to.
This recipe is high in protein and healthy fats and low in sugar. It’s a great start to the day because it balances your blood sugar levels, preventing those sugar cravings later in the day and keeping your energy levels high. It’s free of the ingredients that often trigger inflammation, bloating or weight gain and it’s super speedy to make – in fact you can premix the seeds and store in an airtight container in the fridge to replace your regular box of cereal!
1 ¼ cups non-dairy milk (my favourite is almond milk)
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon coconut oil
¼ cup sunflower seeds
¼ cup pumpkin seeds
¼ cup ground flax seeds
¼ cup goji berries
2 tablespoons dry coconut, unsweetened
1 tablespoon of raw honey or 5 drops of stevia
Warm your milk.
In a small saucepan, add your non-dairy milk over a medium low flame.
Warm the milk for 2 to 3 minutes. Make it as hot as you can stand it without boiling.
Add vanilla, honey or stevia, cinnamon, ground ginger, and coconut oil (optional).
Mix your cereal.
In a cereal bowl, add your sunflower seeds, pumpkin seeds, flax seeds, goji berries, and coconut.
Serve your muesli.
Add fresh berries and other dried fruit to your liking.
